New Recipe

My darling husband had to work a swing shift today meaning I was eating alone, again. Instead of foraging for cereal or leftovers that my husband already stole, I decided to finally cook. I haven't cooked in quite some time.

I flipped through the bible.. (Better Homes and Gardens Cook Book) and found a recipe for chicken with all the ingredients that I have! Awesome. Lemon Mustard Chicken page 818.

It called for dijon mustard, an ingredient I don't normally use and broiling, a style I don't typically use either. Luckily Dan wasn't there to suffer any consequences if they arose.

And they didn't! It turned out yummy!

  • meaty chicken pieces (I used flattened skinless boneless breasts)
  • 2 tablespoons of cooking oil
  • 1 tablespoon of dijon mustard
  • 1 tablespoon of lemon juice
  • 1 1/2 tablespoons of lemon-pepper seasoning
  • 1 teaspoon of oregano or basil crushed (i used both)(I couldn't make up my mind)
  • 1/8 teaspoon of ground red pepper (I used paprika since that was the closest thing I had)
1) Clean chicken and pat dry
2) Place bone up in broiler pan 4-5 inches from top
3) Broil for about 20 minutes or until browned
4) Mix all ingredients together for the glaze
5) Flip the meat and top with glaze
6) Remove and enjoy after 20 minutes or until inside is no longer pink

Voila! A happy stomach!

I found the mustard to be a little too tarty but when I cut it up into little pieces and mixed it with my steamed rice, it was mucho deliciouso!
